Although many people think making paté is very difficult, this is not the case at all. Pierre Jenatton will tell you that he's made everything from chicken liver mousse to country-style pork paté to foie gras. The best thing about making your own paté is that you can add whatever ingredients you like. It's not something you make in 30 minutes, it usually requires at least 24 hours and will get better with age. And it doesn't have to be made with pork or meat. Jenatton has made several seafood patés using red bell peppers and green peas to add some color, mixed with shrimp and scallops for a delicious result.
